This is a very simple and quick dish that combines the standard pork chop with the wonderful flavor of peanuts. Even the kids loved it. This flavorful Thai dish makes a high protein meal, but also makes a great healthy holiday appetizer recipe! Just use smaller pieces of meat and serve on a platter with dipping sauce ... ENJOY!
Makes 4 servings
Active Time: 4 minutes
Total Time: 12 minutes
Ingredients
1 tablespoon bottled seasoned stir-fry oil
12 ounces thin-sliced pork cutlets, cut in 1/2-inch-wide strips
1/3 cup bottled Thai peanut sauce
1 bag (16 ounces) refrigerated coleslaw mix (shredded cabbage and carrots)
1/4 cup chopped cilantro
Preparation
1. Heat stir-fry oil in a large nonstick skillet over medium-high heat. Add pork in 2 batches and stir-fry 30 to 45 seconds until barely pink. Remove to a bowl with a slotted spoon. Stir in peanut sauce.
2. Put coleslaw mix and 1/4 cup water in skillet. Cook, stirring, 3 to 4 minutes until vegetables are crisp-tender.
3. Add pork mixture and stir 1 minute until hot. Sprinkle with cilantro.

RECIPE OF THE DAY! MANGO THAI CHICKEN LETTUCE CUPS
For those of you who can eat chicken. This is a recipe that I used to love to eat before my Lap Band.(I'm one of those that can not eat chicken) This juicy and tender Thai dish is full of robust flavors, and low in calories. ENJOY!
Makes 4 servings
Active Time: 10 minutes
Total Time: 20 minutes
Ingredients
1 mango, peeled and cut into 1/2-in. chunks
1 jar (11.09 oz) Thai Kitchen Red Curry 10-Minute Simmer Sauce
1 lb skinless, boneless chicken thighs, cubed
1 head of iceberg lettuce
Preparation
1. Put 1/2 cup of the mango and the sauce in a food processor or blender and process until smooth.
2. Heat 1 tsp oil in a large nonstick skillet over medium-high heat. Add chicken and sauté 5 minutes, or until browned.
3. Add sauce mixture and bring to a simmer. Simmer 3 minutes, or until chicken is cooked through. Stir in remaining mango. Serve over lettuce leaves or over rice sprinkled with chopped cilantro if desired.

RECIPE OF THE DAY! ASIAN STYLE SESAME APPLE SLAW
Looking for a great salad that is a little different try this Asian style salad. Great for all year round.
Makes 8 servings
Active Time: 20 minutes
Total Time: 35 minutes
INGREDIENTS
1/4 cup seasoned rice vinegar
2 Tbsp dark sesame oil
1 Tbsp honey
1/2 tsp salt
1 jalapeño or serrano pepper, seeded and minced (2 tsp)
1 each Gala, Golden Delicious and Granny Smith apple, halved, cored and thinly sliced
8 cups finely shredded Napa cabbage
1 red bell pepper, seeded, cut in thin strips
1/2 seedless cucumber, cut in thin strips
3 scallions, thinly sliced
3/4 cup cilantro
2 Tbsp toasted sesame seeds
1 container(3 oz)radish sprouts
PREPARATION
1. In a large bowl, whisk vinegar, oil, honey, salt and chile pepper until blended. Add apple slices and toss to coat.
2. Add remaining ingredients, except radish sprouts, and toss to coat (slaw can be made up to 4 hours ahead and refrigerated). Just before serving, scatter radish sprouts over the slaw. Gently toss.
